Fishing:
Babine Lake is British Columbia's largest natural body of water. Covering 250 square miles, the lake holds trophy rainbow (to 10 lbs.) and can be taken by fly, spin, casting or trolling. Lake trout (char) are found deep in the lake and the appropriate gear is necessary to get down to them. Usually lead core line is sufficient but down riggers are often used. Kokanee, whitefish and burbot are also plentiful.
Special Events:
Each year Babine Lake Resort recognizes the "catch of the year" by hosting an Awards Night. There is a $50 prize for largest trout and largest char. (adult & junior) The long weekend in August marks our Annual Fishing Derby. Join us every Wednesday evening for a pot luck Supper. Lake Trout Light This recipe works especially well with lake trout but can also be used with other trout or salmon. serves 4
2 limes 2 small tomatoes 1 tablespoon capers, drained 1 green onion 1 tablespoon chopped chives 2 tablespoons cream Flour for dusting fish salt and pepper 1 tablespoon olive oil 5 Tablespoons butter Trout fillets, about 6-8 oz. per Person
Preparation: With a knife peel the limes entirely down to the flesh. Cut the sections from between the membranes and chop the sections into 1/8 inch dice. Chop the capers. Cut the onion into small pieces. Peel, seed, and chop the tomatoe into 1/8 inch dice.
Brush each of the fillets with cream and dust with flour, shaking off any excess. Salt and papper to taste.
Heat the oil in a heavy frying pan over medium high heat. Saute the fillets for 1 minute. Turn them over and add 3 tablespoons of butter to the pan and continue cooking until the butter foams and the fillets are done through. Do not let the butter burn.
Remove the fillets from the pan to your warmed serving dish. Add the onions and capers to the pan. Then add the remaining 2 tablespoons of butter. Turn off the heat and add the tomato and lime. Stir and let set for 30 seconds. Cover the fillets with the sauce, garnish and serve.
